I'm being optimistic with the title I know, but a girl can dream right?

Sorry, I know it's been a while! But it's now time for the second recipe. Well the first-listed-but-made-second recipe, but that's a bit of a mouthful.
Now I've roasted chicken breasts before so this one is should definitely be an easy one for me (she says, jinxing herself).
Unfortunately I couldn't find a recipe that covered all the bases I wanted, so after much of the good old Googling, I discovered two that went well together (which obviously i still modified a little...). Listed below are the different recipes I consulted:
Most recipes I found were pretty relaxed on what sides you wanted, so I decided it would be easy enough to boil some vegetables and stick some new potatoes in the oven to roast. How wrong I was...
So to start this story at the beginning - I spent ages trying to find the ideal time to make this dish, but life just kept getting in the way and I just couldn't find the time to go to the shop. This was solved by not going myself. I managed to avoid too much crouching in the Tesco aisles like a madwoman, by sending my boyfriend B to do the shopping while I was at work.
The dear darling boy decided that he wanted to do his part to help, so decided to buy the Tesco Finest of all of the ingredients he could, which was adorable. See below for a beautiful shot of my lovingly picked ingredients.

The process didn't start out too badly. I had no small children running around like with the cake, and the Finest of ingredients. Does that count as a pun? I think it counts as a pun...
I sliced open the side of my chicken breasts, not reading the part where the recipe says "inch long" but no matter - there's not that much difference between one inch and three, right?
Two knives, a tablespoon and much washing of hands later (I'm a little paranoid with chicken), two prosciutto wrapped feta stuffed chicken breasts went into the oven. Now I know the recipe said goat's cheese and red pepper, but I just really fancied it stuffed with feta - don't ask me why I didn't just picked a recipe that used feta. Overall I was really happy with them!

I then started preparing all the vegetables, as after I'd turned the chicken at the 20 minute mark, I'd want to start the sauce and the veg cooking. About 10 minutes into this chopping extravaganza, I discovered that I had totally forgotten about the potatoes. You know, the ones that take about 40 minutes to cook...
Cue mad potato chopping and oil drizzling before chucking them in the oven on the very top shelf to cook as quickly as possible. I also took this opportunity to flip the chicken, which looked and smelled amazing!
Panic over, I put the broccoli and green beans on to boil, and started frying the mushrooms for the sauce. I then added the wine, which made a delightful looking mush, Finally, in went the creme fraiche, and the sides cooked on the hob were complete!
Then came the battle of how slowly I could get everything ready and plate up to give the potatoes more time - they were still white...
Luckily - well unluckily really, but luckily for the potatoes - we realised we'd forgotten to put the dishwasher on and had no clean plates, cue B to the rescue, rinsing some plates while I hovered saying "it's okay, take your time" and "there's no rush!".
Finally, we had everything on the plate but those dratted potatoes, and B gave up and just started eating. But I just couldn't! Mainly because I wanted a nice photo of it all - I was really proud of myself, okay!
Finally, the potatoes were ready, and I could sit and enjoy. And let me assure you, I did. That was absolutely one of the nicest meals I have had in a long time. Even B, who isn't a huge fan of stuffed chicken or potatoes (he's more team pasta, whereas I'm a potato Queen), really enjoyed it - or at least he told me he did...

That looks very appetising, if I do say so myself. I'm so glad I decided to try this 'recipe'. It was so nice and actually pretty easy to make - if you ignore potato-gate...
